1 cup all-purpose flour
1 whole egg
3 egg yolks
1 pinch salt
3 cloves of garlic, minced
1/4 cup olive oil
1 teaspoon red pepper flakes
fresh ground pepper to taste
Directions
- Take one egg and three egg yolk in a bowl. Whisk the eggs with a fork.
- When you have whisked the eggs, slowly beginning to mix flour. The mixture will change consistency and will be soft enough for you to knead.
- Knead the dough for about 15 minutes. The more you knead the more soft the dough will be. When the dough is very uniform, very smooth and very glossy, wrap it in plastic and let it rest for about 20 minutes.
- Set up your pasta roller. Cut your ball of dough into two pieces. Run each piece through the machine. Fold each into thirds and run through again. Repeat this process three times.
- When the sheets are no longer sticky but still malleable, fold one sheet at a time in half, then in half again, and again, until you have a roll of about 3 sheets “large Cut along the roll, about 1/8 inch apart “dissimilar. Return the noodles to your tea towel to dry for a few minutes more.
- Now that Tagliolini is ready, boil water in a pot and add salt. Boil the tagliolini in it. When the pasta floats to the surface, it’s ready. Now strain it.
- Take a pan. Add oil, garlic. When the garlic starts to sizzle in the oil, add the tagliolini. Lower the heat to make sure it doesn’t burn. Add chili flakes. Sprinkle with cheese and a few cranks of fresh ground pepper
