- Spicy Base
1 medium green bell pepper (about Ā½ cup)
1 medium tomato
1/2 medium onion
2 cloves garlic
2 chipotle chilies
2 tbsp adobo sauce
1 teaspoon ancho chile powder
1 teaspoon ground cumin
Ā½ teaspoon dried oregano
Ā½ teaspoon Salt
Ā½ freshly ground black pepper
Ā½ smoked paprika
1 teaspoon red wine vinegar
Ā½ cup vegetable broth
2Ā tbspĀ lime juice
2Ā tbspĀ maple syrup
2Ā tbspĀ tomato paste
- For Tofu
1 tbsp olive oil
1 (16 ounce) package extra firm tofu pressed, cut into 8 slices
Directions
- Combine all the spicy base’s ingredients except for vegetable broth and blend until itās slightly chunky
- Heat the oil in a skillet over medium-high heat until it shimmers and cook the tofu until golden brown, flipping occasionally. Then smash the tofu into small pieces or after frying cut them into smaller pieces.
- Heat a medium skillet over medium high heatĀ and add oil to it. Add both the blend and the tofu and mix them together. Add vegetable broth and cook for about 10mins until thicken. You can add more salt or pepper according to your taste!
Notes
- Try not to over blend or over cook as it will be mushy. Chunky bits adds to its taste!
