1/3 cup of ketchup: It is advised to choose sweeter ketchup that contains more corn syrup.
We use low-sodium soy sauce, which reduces the saltiness, in place of 1/3 cup of soy sauce.
If you don’t want any sugar, you can use honey in place of the 1/4 cup of brown sugar.

To give the chicken a mild nuttiness, add 1/4 cup of sherry wine.
2 tablespoons of sesame oil: you can use more or less because it’s a powerful component.
A minimum of two pieces of ginger root must be crushed.

- Whether it is an automatic or coal-fired grill, preheat it.
- Prepare the chicken leg quarters or bone-in chicken thighs. Remove any extra skin and fat, then pat the chicken dry with a clean kitchen towel or a thick piece of paper to absorb any extra moisture.
- To further release their flavor and scent, prepare the ginger and the garlic by chopping and smashing them.
- Combine all the wet ingredients, including the brown sugar, sriracha, red pepper flakes, or any other substitute for the spices, in a bowl, including the ketchup, soy sauce, honey, sherry wine, sesame oil, and Worcestershire sauce.
- Ginger and garlic are added to the marinade mixture as aromatics.
- Lemons are cut in half, and the juice is squeezed over the marinade.
- Cook the marinade mixture in a big pot, then add the water. After bringing to a boil, add the chicken. For 35 to 40 minutes, cook.
- Use a grill brush to coat the chicken with some of the remaining marinade after cooking it for five minutes on each side in the heated grill.
