Ingredients

  • 3 cup all-purpose flour

  • 1 cup warm water

  • 1 tbsp. granulated sugar

  • 2 tbsp. active dry yeast

  • 1 tbsp. extra-virgin olive oil

  • 1 tbsp. kosher salt

Directions

  • Take a bowl and mix water, sugar and yeast. Add flour to it and give a stir. Let it sit for 20mins. It should rise about double its size.
  • Take a flat board, place the dough on it. Add oil and salt then knead the dough well. It should be soft, smooth and elastic. You can add sprinkle of flour when kneading if its too sticky. Then cover it with a damp towel and let it sit for another few minutes.
  • Sprinkle a little flour on a clean surface. Roll the dough into eight pieces of balls. Allow 10 minutes of resting time and cover with a towel or plastic wrap. Flatten each dough down and spread out on the surface with fingers and punch. Roll each round into an 8″ wide, 14″ thick circle, working one at a time. If the dough begins to stick, add more flour.
  • Set your oven to 500° and place a pizza stone or a sizable cast-iron skillet inside. Open your oven and, working rapidly as you can, arrange as many pitas as will fit on your skillet or stone without touching. Allow to bake for 3 to 5 minutes, or until an air pocket expands and the pita starts to turn golden brown. Continue with the subsequent rounds.

Notes

  • To keep warm, wrap baked pitas in a fresh kitchen towel.
