- 1/4 cup chopped green bell pepper
- 3 cloves garlic, minced
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (6 ounce) can tomato paste
- 2 cups water
- 1 teaspoon sugar
- 1 teaspoon dried basil leaves
- 1 teaspoon fennel seed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup red wine
- 1 pound cooked pasta
- 1/4 cup grated Parmesan cheese
How to make Sunday Gravy
- In a large pot, or Dutch oven, heat olive oil over medium heat until hot.
- Add sausage and cook until brown sausage over medium heat about 5 minutes until cooked through. Take out the sausages
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute.
- Stir in crushed tomatoes and tomato paste.
- Add the wine and stir well
- Add the herbs, celery, bell peppers now and cook till fragrant.
- Add water, sugar, salt, and pepper. Bring to a boil.
- Reduce heat to low and simmer for 2-3 hours stirring occasionally.
- Serve over cooked pasta rice, or potatoes with cheese and basil leaves on top
